What You’ll Need

You only need a few ingredients to cook delicious roast beef at home. Here’s what you’ll need for this recipe:

  • 3 pounds of your preferred cut; we recommend rump roast, but there are other options. Ask your local butcher for a recommendation.
  • Kosher salt, to taste
  • 2 tablespoons butter
  • One 2-ounce package of dry onion soup mix
  • 1 cup beef broth or stock

If you’d like more flavors, try using additional ingredients, including red wine, garlic, black pepper, and herbs like parsley, sage, rosemary, and thyme. For an all-in-one meal, put some potatoes and carrots in with the beef.

 

How to Prepare

Allow the roast to come to room temperature while you preheat the oven to 300º F. Trim any excess fat from the meat and rub kosher salt into all its sides. Put the butter in a roasting pan or Dutch oven and melt it over medium-high heat. Sear the meat for about one minute on each side so your roast is brown all over. Next, sprinkle onion soup mix over the roast and pour beef broth over the roast and around the sides of the roasting pan. Cover the roast and put it in the oven for 3 hours or until it is tender and begins to fall apart. If your roast is over 3 pounds, add an extra 40 to 60 minutes per pound to the cooking time.

After removing the roast from the oven, keep it covered and let it rest for 10 to 15 minutes. Use a sharp knife to cut it into slices and serve!
