Ask someone from the North Shore about roast beef, and you may get a surprisingly strong opinion. But roast beef sandwiches weren’t always a North Shore staple. Their story begins with an unexpected problem at a beachside hot dog stand.

It Started With a Canceled Wedding

The story most commonly associated with the birth of the North Shore roast beef sandwich goes back to Revere Beach in 1951. Kelly’s Roast Beef was operating as a hot dog stand when a wedding was suddenly canceled, leaving the owners with a large amount of roast beef prepared for the reception.

Rather than letting the meat go to waste, they sliced it thin, put it on rolls, and served it to beachgoers. The sandwich caught on, and Kelly’s eventually became known for what would turn out to be a defining North Shore specialty.

From Beach Stand to North Shore Staple

The sandwich didn’t stay in Revere for long. Other restaurants throughout the North Shore began offering their own versions, and over time, certain characteristics became closely associated with the local style.

The beef is typically sliced very thin and served rare to medium-rare, creating the tender texture and rich flavor that distinguish it from the roast beef you might find elsewhere. Soft rolls and familiar toppings became part of the tradition, too.

Before long, people weren’t simply ordering roast beef. They had favorite shops, favorite combinations, and very specific opinions about how their sandwich should be made. That’s the kind of loyalty that turns a menu item into part of a community’s identity.

Our own history is closely connected to that tradition. Nondas Lagonakis came to Massachusetts from Greece in 1961 and worked three jobs before purchasing the Salem Bill & Bob’s location in 1968. He and his family continued building the business while keeping quality and community at the center of what we do.

Today, roast beef sandwiches remain one of the foods most closely associated with the North Shore. The tradition has continued through generations, with local restaurants putting their own stamp on a sandwich that has become distinctly Massachusetts.
